Greek Yogurt Raspberry Loaf

 

GREEK YOGURT RASPBERRY LOAF

PREP TIME: 5 minutes

TOTAL TIME: 1 hour

SERVES: 1 - 9 by 5-inch loaf, 8 people

INGREDIENTS:

1 ½ C flour

1 ¼ C greek yogurt, full fat

2 eggs

½ C coconut oil

½ tsp salt

¾ c sugar

1 ½ tsp baking powder

1 c raspberry

½ tsp lemon zest

 

1 preheat oven to 350f 

2 In stand mixer Combine flour, salt, sugar, baking powedre together, mix well. Mixing on low, add eggs and oil, mix just unitl combines. Add yogurt mix just until combined then add raspberry and lemon zest. Gently mix just to distribute the rasperries. Don’t over mix, as you don’t want to smash the raspberrues too much, a little is ok. 

3 Fill 4 ½ x 9” greaseds loaf pan, sprinkle with coarse sugar, bake 40-45 minutes until golden brown and center springs back when pushed. Can cover with foil last 15 miuntes of baking to prevent top from over browning.
