Mango-Raspberry Fruit Leather

 

MANGO AND RASPBERRY FRUIT LEATHER

 PREP TIME: 5 minutes

TOTAL TIME: 3+ hours

SERVES: apps. 8

Okay so who doesn’t love a fruit roll up. Homemade is so much better, with sooo much less added sugar. Its too easy not to do, the kiddos and adults will love this inexpensive easy at home version. Have fun and experiment with different fruit flavors, adding as much or as little sugar as you want. Strawberry works great, even mixed with blackberries. 

 INGREDIENTS:

1 large ripe mango

1 6oz package raspberries

2 TB sugar

 

1 preheat oven to lowest setting 150f

2 Place cut fresh mango in food processor of blender, blend until smooth. Remove and set aside. Then add berries with sugar and blend until smooth. 

3 Place dollops of mango and raspberry puree all over a half sheet pan (12 ½” x 17 ¼”) lined with a silpat. With a small offset spatula spread evenly over sheet pan. Don’t spread to the very edges, so you have room to grab and peel the fruit leather off silpat to cut and store. Try to spread as evenly as possible, not too thin and not too thick. 

4 Bake for appx 2 ½-3 hours. Rotating every hour. When it is not sticky or wet and is tacky it is done. 

5 Let cool. Remove and place on top of wax paper. Cut with scissors fruit leather and wax paper
