Berry Delicious Breakfast Bars

 

BERRY DELICIOUS BREAKFAST BARS

PREP TIME: 10 minutes 

TOTAL TIME: 50 minutes

SERVES: appx. 12

Okay ,so I’m going to be honest—these bars are essentially dessert. It’s basically cobbler in the form of a bar you can eat on the run.

Not everything needs to be super healthy, right?! Dessert or not, I love these with coffee in the morning, or really any time of day. I usually wake up to find half the pan gone in the morning, some mystery monster having scavenged them in the night....

CRUST

2 cups old fashioned rolled oats

1 cup whole wheat flour

1 cup packed dark brown sugar

½ teaspoon ground cinnamon

½ teaspoon ground ginger

¼ teaspoon baking soda

½ teaspoon fine sea salt

¾ cup (1½sticks) unsalted butter, melted

FILLING

2-6oz container of fresh raspberries   

1 – 6 oz container fresh blueberries    

1 - 6 oz container fresh blackberries                             

1 peach cut into small pieces             

2 tsp lemon juice                             

½ lemon zest                                     

1 tsp vanilla                                    

½ C sugar

CRUMBLE:

¼ C sugar                                  

2 TB butter, cold cubed           

½ C oats, old fashned             

¼ C flour, white                        

1/8 tso cinnamon                    

¼ tsp salt

TO MAKE THE CRUST:

1 Preheat oven to 350f

2 Combine everything together in food processor and pulse until combined. 

3 Flatten out firm and even in bottom of 8x13” baking dish or similar size. 

4 Bake crust layer for 10 minutes, remove from oven. 

5 While baking make fruit mixture and crumble topping. 

FILLING:

Wash and drain fruit. You don’t have to dry completely. Stir together to evenly combine ingredients. Evenly spread on top of baked crust.

CRUMBLE:

1 Combine in food processor, pulse until butter is pea sized. Spread evenly over fruit

2 Bake 30-40 minutes until sides are super bubbly and sticky looking, and crumble is lightly golden.
